Martin Hudák – Savoy, UK

The secret of five star hospitality

Martin Hudák was born in Presov, Slovakia and began his career behind the bar immediately after graduating from secondary school. He quickly discovered a passion for both coffee and cocktails, and for combining the two, and through determination and hard work moved to London five years later to join one of the world’s best bar teams at The Savoy’s legendary American Bar, where he holds the position of senior bartender.

Not only does Martin hone his bartending skills behind this famous bar but he continues to showcase his expertise by participating in prestigious industry competitions. He has shaken and stirred at the world finals for HCGP, Beefeater MIX LDN and Absolut Invite, and has made it to the world finals of Coffee in Good Spirits several times. Martin was a double runner up in Melbourne (2014) and Shanghai (2016) with his signature coffee beverage program and his Irish Coffee respectively.

Martin is also the creator and co-owner of Ginger Mania, a craft micro brewery producing botanical ginger beer.

Richard Osmond & George Fredenham – The Foragers, UK

Sweet Woodruff & the Taste of Spring: how the

flavour of the wild builds culture & community

The Foragers are a team of hunters and gatherers who hunt wild game, forage wild plants, fruits and fungi and cook a unique brand of wild food all across the South East of England. Richard and George run a wild food pub and microbrewery, The Verulam Arms in St Albans, where they make beer with wild ingredients, homemade wild liqueurs and cocktails. They also run foraging workshops and create immersive wild experiences!

Rose Van Asten – Cocoon, Netherlands

Creating A Safe Learning Environment

Rose was born in Swaziland, having lived in Tanzania for most of her youth until she moved to the Netherlands as a teenager. Rose started working at a cafe where the owner Louis Claus loved coffee and his Kees van der Westen Mistral. Rose was so shy she thought the best place to hide was behind that very same machine and it was in this spot that she found a multitude of opportunities, flavours and aromas! Louis taught Rose all he could, whilst she prepared for Championships by travelling the world to learn about coffee. It was then that Rose realised how there was almost no training available, and the information available was so varied! One-half of Cocoon, Rose focusses on training and consulting with the key goal of helping baristas make great coffee!

Thursday 4 May | The Aftertaste

In addition to the main day's activities, the program will provide activities for CoLab'ers to investigate the local coffee scene through tours, roastery visits and cuppings!
